- 1 Aubergine
- 2 Red Pepper, 1 Yellow Pepper
- 1 pack of Halloumi
- half teaspoon of Seaspoon Seaweed Boost (2g sachet)
- Tablespoon honey
- French dressing with half teaspoon of Seaspoon Seaweed Boost
- pomegranate seeds
Slice the aubergine and fry in oil until soft. Slice the peppers into 4 large pieces and grill until the skin is blackened.Remove the skin off the pepper and slice each piece into 2, add to the aubergine slices.
Put 1 teaspoon of Seaspoon Seaweed boost into bowl and add dessert spoon of honey. Heat in microwave for 10 seconds or put in small pan to heat.
Arrange the peppers and aubergines on plate, drizzle little french dressing over the top. Slice the halloumi into 8 slices and fry on each side..Serve hot halloumi slices on top of salad ,drizzle honey and seaweed mixture on top of halloumi slices. Scatter pomegranate seeds and serve with the seaweed dressing.
Serves 6 as starter or 4 as main course
