Summer cocktails and mocktails with a Seaweed twist

Try your hand at mixology this summer, with a seaweed twist!

Whether a refreshing mocktail, or a tempting cocktail, add a dash of Seaspoon Seaweed for extra flavour.

Seaweed St Clement's

INGREDIENTS (makes two cocktail glasses)

  • 75 ml orange juice
  • 75 ml Pink grapefruit juice
  • 1 peach or 100g tinned peaches
  • 200 ml cloudy lemonade
  • Sprinkle of Seaweed Boost to serve.
  • Crushed ice / or pour onto ice cubes.

METHOD

  1. Put all ingredients in food processor and whizz.
  2. Sprinkle Seaweed Boost to serve.

Strawberry, seaweed and watermelon margarita

INGREDIENTS (makes two cocktail glasses)

  • 60g / large handful of strawberries
  • 200g watermelon
  • Juice of a lime
  • Tablespoon of agave syrup
  • Sprinkle of seaweed Boost to serve. 
  • Optional Vodka /alcohol free vodka
  • Crushed ice/ or pour onto ice cubes.

METHOD

  1. Put all ingredients in food processor and whizz.
  2. Sprinkle Seaweed Boost to serve.

    Iced tea with seaweed

    INGREDIENTS (makes two large glasses)

    • Mug of cold tea (250ml)
    •  250ml Coke
    • 200ml cloudy lemonade
    • 200ml peach or passion fruit juice
    • Sprinkle of Seaweed Boost
    • Optional Gin and Vodka
    • Crushed ice / or pour onto ice cubes
    METHOD
    1. Put all ingredients in food processor and whizz.
    2. Sprinkle Seaweed Boost and garnish with slice of lemon and mint.

    Strawberry, seaweed and mango cooler

    INGREDIENTS (makes two large glasses)

    • 100g strawberries
    • 100g mango (tinned or fresh)  
    • 200ml lemonade
    • 100ml orange juice
    • 1 dessert spoon agave syrup
    • Sprinkle of Seaweed Boost
    • Crushed ice / or pour onto ice cubes

    METHOD

    1. Put all ingredients in food processor and whizz.
    2. Sprinkle Seaweed Boost to serve.

    Strawberry and seaweed daiquiri

    INGREDIENTS (makes two cocktail glasses)

    • 100g strawberries
    • 1 fresh squeezed lime
    • 75ml Sugar syrup
    • Optional Rum
    • Sprinkle of Seaweed Boost
    • Sprig of mint to serve
    • Crushed ice / or pour onto ice cubes
    METHOD
    1. Put all ingredients in food processor and whizz.
    2. Sprinkle Seaweed Boost and decorate with mint to serve.

    Seaweed scotch

    INGREDIENTS (makes two)

    • 120ml Scotch

    METHOD

    1. In a clean container pour the scotch over the sea lettuce and let rest for 12–16 hours, agitating occasionally.
    2. Strain the spirit through a coffee strainer into two glasses and add 15ml of chilled, distilled water.

    Seaweed Martini

    Not as strange as it sounds. The herbal notes of good gin are natural compliments to the earthy flavors in dulse.

    INGREDIENTS (makes one)

    • ½ tsp Dulse (plus a dusting as garnish)
    • 5 (¼-inch thick) slices fresh celery
    • 1 ½ ounce sake
    • 1 ½ ounce London dry gin
    • 2 drop celery bitters

    METHOD

    1. Place a the dulse and celery slices in the bottom of a small pitcher. Pour in the sake and let the flavors come together for a few minutes.
    2. Strain the infused sake into a mixing glass half filled with ice, add gin, and bitters. Gently stir until well chilled and properly diluted, about 20 seconds.
    3. Julep strain into a chilled cocktail glass. Garnish with a sprinkle of dulse.

    hot seaweed toddy

    Sea Toddy

    A rival to the classic toddy: the cloves and lemon bring spice and aroma, the seaweed adds salt.

    INGREDIENTS (makes one)

    • 50ml water
    • 2 cloves
    • 1 strip lemon peel
    • 1 pinch Seaweed Boost
    • 2 tsp honey
    • 60ml cider Brandy
    • 2 tsp lemon juice 

    METHOD

    1. Gently heat water, cloves, peel and seaweed; before it simmers, take off heat and stir in honey.
    2. Put brandy in a warmed glass, top with strained infused water and add lemon juice.

    citrus and seaweed cordial

    Citrus and Seaweed Cordial

    The subtle infusion of seaweed adds a unique umami layer to this citrus cordial. 

     INGREDIENTS

    • zest and juice of 2 limes
    • ½ tsp Seaweed Boost
    • 2 cups of sugar
    • 1 stick of vanilla
    • 4 ½ cups of water

    METHOD

    1. Place all ingredients in a pot and simmer for 15 minutes, stirring until the sugar has dissolved, then simmer for another 20 minutes until the syrup thickens and reduces slightly.
    2. Line a sieve or colander with a muslin cloth and use to strain the cordial into sterilised bottles.
    3. Use straight away, otherwise it will last up to 6 weeks if stored in the fridge.
